How to make a simple weed cake

Weed cake is simply a cake that uses THC-infused butter or oil instead of regular butter or oil. The THC-infused butter or oil can be made at home using a saucepan, crockpot, or double boiler. You can use an edible dosage calculator to help determine the strength of the edible. If you prefer pre-determined dosages, THC-infused butter, and oil can also be purchased at a dispensary.

Once you have THC-infused butter or oil, it can be used in any recipe that calls for regular butter or oil. For example, you could add it to your favorite brownie mix, cookie dough, or cake batter. Just be sure the cannabis has been decarboxylated (or you won’t get the effects you’re looking for)!

Decarboxylation is the process of converting tetrahydrocannabinolic (THC-A) into THC, and it is essential for getting the full psychoactive effect of THC. You can decarboxylate your weed by baking it in the oven at 245 degrees Fahrenheit for about 40 minutes. Once your weed is decarboxylated, simply infuse your butter or oil with cannabis and you're good to go!

Space cake recipe

This space cake recipe takes about 50 minutes to complete when using pre-made cake mix, and a bit longer if you're making your own cake batter from scratch.

Equipment

  • (2) Large mixing bowls
  • (3) 9 inch cake pans
  • Baking sheet
  • Glass mason jar for cannabis oil
  • Cooking thermometer 
  • Cooling rack
  • Electric mixer
  • Measuring cups
  • Measuring spoons
  • Medium-sized bowl
  • Metal mesh strainer
  • Mixing spoons
  • Oven
  • Parchment paper
  • Saucepan
  • Toothpick 
  • Weed grinder

Cake Layer Ingredients

  • 4 Eggs, large (or 4 tbsp of Gluten-Free Egg Replacer and 8 tbsp of water)
  • 1 gram of Cannabis flower 
  • 2 1/2 cups All-purpose flour (or Gluten-Free Flour)
  • 1/2 cup Butter, room temperature
  • 1 1/4 cups Milk (or dairy-free milk of your choice)
  • 1/2 cup Vegetable oil
  • 1 1/2 cups Sugar
  • 1 tbsp Vanilla extract
  • 2 1/2 tsp Baking powder
  • 1/2 tsp Salt

Strawberry Layers

  • 12 Strawberries, fresh, washed, and whole (for the top of the cake)
  • 1 lb Strawberries, fresh, washed, and sliced
  • 3 tbsp Sugar

Whipped Cream

  • 2 1/2 cups Heavy whipping cream, cold (for a vegan whipped cream option follow this Aquafaba recipe)
  • 1 1/4 cups Powdered sugar
  • 2 tsp Vanilla extract

Steps to decarb your cannabis and infuse oil

Homemade THC-infused oil will have a shelf life of two months. You can make a larger batch by doubling or tripling the recipe and have it on hand to infuse cakes and other foods.

If you do not have THC-infused oil on hand you may want to do this step the day before you make your cake.

  1. Set the oven to 245ºF. Cover your baking sheet with parchment paper. Place your cannabis flower on the baking sheet. Heat the cannabis for 40 minutes.
  2. Use the grinder to break up the cannabis into consistent sized pieces. If you don't want cannabis flower pieces actually in your cake, ensure the ground pieces are large enough so that they don't push through the metal strainer.
  3. Infuse your vegetable oil by adding the vegetable oil to a saucepan and adding the decarbed cannabis. Simmer the oil on low for 2 - 3 hours. Use a cooking thermometer to ensure the temperature stays between 160-200ºF.
  4. Strain the oil through the metal strainer into the glass mason jar. Do not squeeze the cannabis; this adds a "grassy" taste as it releases chlorophyll. Throw out or compost the leftover plant material.

Prepare the strawberries for your strawberry shortcake space cake

  1. Wash 1 lb of strawberries, de-stem them, and slice them into four to five slices.
  2. Place the strawberries in a large mixing bowl and toss them with 3 tablespoons of sugar.
  3. To bring out the juices of the strawberries, place the bowl in the refrigerator for 1 - 2 hours.

Make your strawberry shortcake space cake

  1. Preheat the oven to 350ºF.
  2. Place parchment paper at the bottom of each cake pan and grease the sides of the pans.
  3. Mix together the flour, baking powder, and salt in a medium-sized bowl and set aside.
  4. Add the butter, the infused cannabis oil, sugar, and vanilla extract to a large mixing bowl and beat together until light in color and fluffy. This takes about 2 minutes. To achieve the right texture, be sure to beat together for the entire 2 minutes.
  5. Add eggs one at a time, and mix until mostly combined. If you are using egg replacer, add "one egg" at a time, mixing until mostly combined.
  6. Add half of the dry ingredients to the cake batter and mix well.
  7. Add the milk slowly, stirring until everything is mixed together.
  8. Add the remaining dry ingredients.Scrape down the sides of the mixing bowl. Mix until smooth. Be careful not to over-mix.
  9. Divide the batter evenly into each cake pan and bake for 18 - 20 minutes. Insert a toothpick in the center of the cake to check that it is fully cooked. 
  10. Remove cakes from the oven and allow them to cool for 5 minutes before you transfer them to a cooling rack. Allow the cakes to cool completely on cooling rack.

Make your whipped cream

  1. Add the heavy whipping cream, powdered sugar, and vanilla extract to a large clean mixing bowl and whip on high speed until medium to stiff peaks form (or follow this recipe for a vegan whipped cream option).

Assemble your strawberry shortcake space cake

  1. Place the first cake layer on a cake plate or serving platter. Spread a layer of whipped cream on top of the cake and add half of the strawberries on top.
  2. Add another layer of cake on top. Spread whipped cream and add the other half of your sliced strawberries.
  3. Add the last layer of cake on top and spread or pipe on the whipped cream. Decorate the top of the cake with 12 whole strawberries.
  4. Refrigerate your space cake until ready to serve.
